Arroz con dulce, or coconut rice pudding, is a favorite dessert in Latin countries.  This dessert is the perfect sweet finish to your favorite meal.
Preparation Time: 5 minutes
Cooking Time: 20 minutes
Serves 8


Ingredients:

 


 










1˝ cups Goya Medium Grain Rice
1 teaspoon salt
1 cinnamon stick, in 4 pieces
1 inch piece of fresh ginger, peeled
6 whole cloves
5 cups water
1 can (15.5 ounces) of Coco Goya Cream of Coconut
˝ cup raisins
Ground cinnamon, for garnish


Directions:

1. Cover rice with cold water and soak for 1 hour.  Drain.
2. In saucepan, combine salt, cinnamon stick, ginger, cloves, and 3 cups of water.  Bring to a boil, lower 
    heat and simmer for 10 minutes.  Discard spices, and reserve water.
3. In saucepan, combine cream of coconut, 1 cup of water and water from spices.  Bring to a boil. 
4. Add drained rice and raisins, and simmer over medium/low heat for 15-20 minutes, stirring
    occasionally, until rice is soft and most of liquid is absorbed.
5. Spoon on to a flat serving dish and gently pat down to flatten.  Chill, and sprinkle with ground
    cinnamon just before serving.
