Gallo pinto is Nicaragua’s most popular side dish, and is eaten at any time of the day.

Cooking Time:  20 minutes

Serves 4

  

Ingredients:

2 cups cooked long-grain white rice
2 tablespoons vegetable oil
2 cloves garlic, peeled
2 cups cooked red beans (gallo pinto beans)

1 large onion, finely chopped
1 bay leaf

Ľ cup bean cooking liquid, or water

Add salt and ground black pepper, to taste


Directions:

1. Heat the vegetable oil in a heavy pot.

2. Saute the sliced onions until lightly golden.

3. Add cooked beans, garlic, bay leaf and bean cooking liquid. 

4. Stir gently and continuously for about 5 minutes over low heat while keeping the the beans whole.

5. Add cooked rice and continue to stir for 10 minutes.
