These wonderful, double-fried plantains are enjoyed throughout the Caribbean and, like french fries,
can be served with any meal.

Preparation Time:  5 minutes

Cooking Time:  5 minutes
Serves 4

Ingredients:

2 large moderately ripe plantains
1 tablespoon olive oil 
Salt, to taste





 

Directions:

1. Peel plantains, cut into diagonal slices, ¼ inch thick diagonal slices.

2. Deep fry on both sides in hot oil (375° F) until tender, about 3 minutes on each side.
3. Remove and drain in paper towel.
